Egg Rolls

1 lb ground pork or chicken
1/2 lb chopped shrimp
1/2 cup finely minced shallot
1 tsp garlic powder
2 cups shredded jicama*
1/2 cup cut bean thread
1/8 cup chopped Chinese black mushroom
1/2 cup shredded carrot
1 tsp salt
1 tsp black pepper

*after shredding, mix with 1 tsp. salt and squeeze out excess water. about 1 cup will remain

Mix all the ingredients well and wrap in rice paper which can be found in the frozen section of Chinese grocery stores. Depending on the size of the rolls, egg rolls will need to be deep fried for 5 or more minutes in 350 degree oil.

Potato Casserole

32 oz potatoes o’brien or hash brown cubes, thawed
12 oz cream of mushroom or chicken soup
16 oz sour cream
1 med yellow onion, chopped
1/2 cup butter or margarine, melted
8 oz cheddar cheese, grated

Preheat oven to 350 degrees. Combine all ingredients in large bowl and mix well. Bake in well greased pan. Optional, sprinkle with parsley and/or paprika. Bake for one hour.
